- 3 cups flour
- 1 cup sugar
- 1 cup unsalted butter, softened
- 2 eggs
- 2 tsp. vanilla
- 1 tsp. baking soda
- 1/2 tsp salt
- neon food coloring
- assorted sprinkles
These cookies were so much fun to make.
In a bowl and using an electric mixer, blend the sugar and softened butter until the mixture is creamed. Then beat in the eggs and vanilla extract until fluffy. Next, add the 3 cups flour and mix the batter until you have achieved a smooth textured dough.
Once the mixing process is complete, separate the dough into four or five equally sized balls. Then select a neon liquid food coloring color and add a few drops of color to the dough. Kneed the dough until coloring is evenly shaded throughout. Continue adding more drops of food coloring until desired color is achieved. Repeat the process with the next dough ball. You will want 4 to 5 different colors of dough for your cookie design.
Place each colored dough ball in its own plastic zipper bag or air tight container and refrigerate until the dough is firm, this usually takes about one hour.
Once the doughs have chilled remove them from the containers. Take a small section of one of the colors of dough and roll it between your hands making a snake/ log shape.
Start to roll the dough into spiral pattern.
Then roll the next color the same way and add it to your spiral shaped design, continuing until you have used all the colors and have achieved the desired size.
Once you’ve achieved the desired cookie size, garnish your dazzling unicorn creation with your selected sprinkles. I opted for butterfly and heart sprinkles, pink edible glitter and silver balls to top off my snazzy cookies.
Bake in a preheated oven at 350°F or 177°C degrees for about 8- 10 minutes. You want the cookies to just be starting to lightly brown. The longer the cookies bake, the more they darken and the cookie colors begin to lose their brightness.
