- 1/2 cup butter, softened
- 3 tbsp granulated sugar
- 1 cup light brown sugar
- 1 egg
- 1 3/4 cup flour
- 2 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 1/2 tsp espresso coffee powder
- 1/2 tsp salt
- 1 1/2 cup semi sweet chocolate chips
Everyone needs some of these this holiday season!
Preheat oven to 300°F/ 150°C. Cream butter with all sugars until fluffy, best to use an electric mixer. Then beat in egg, vanilla and mix for 30 seconds. In a separate bowl sift in all dry ingredients (except espresso powder) and slowly mix into butter mixture. Once blended add espresso powder and chocolate chip and gentle fold into the batter.
Drop cookies onto greased cookie sheet and press dough gently with the back of a spoon.
Bake until lightly brown, about 20 minutes.
