- 3 ounces cream cheese
- 1 cup white sugar
- 3/4 cup butter, softened
- 2 3/4 cups all-purpose flour
- 1 teaspoon vanilla extract
- 1 egg
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- paste food coloring, assorted colors (red, orange, yellow, green, blue)
In a mixing bowl cream butter, cream cheese and sugar until fluffy. Add egg and vanilla; beat until smooth. In a second bowl sift together baking powder, salt and flour. Then combine wet and dry ingredients, mix until well blended. Divide dough into 4 or 5 small bowls.
Tint each section of dough with food coloring, work color into dough until desired color is achieved. Wrap each section of dough with plastic wrap and chill for 2 hours. After dough is chilled preheat oven to 350°F/ 180°C. Roll each section of colored dough into a cord, like a snake. Make sure each cord about the same thickness.
Lightly press the red, orange, yellow, green, and blue cords together, one at a time. Then gently bend dough into a wave pattern. Cut the wave into separate rainbows. Rainbows should bake until soft but not browned or crispy, about 8 minutes.
