- 6 ounces cream cheese
- 5 1/2 cups flour
- 2 cups Sugar
- 1 1/2 cups butter, cubed and softened
- 2 tsp baking powder
- 2 tsp lemon extract
- 2 eggs
- 1/2 tsp salt
Recently, a reader informed us that our first version of Unicorn Poop Cookies were less than accurate. We’ ll spare you their detailed description but lets say he thought the cookies lacked…well…um…proper color blending. We took this under advisement and spent the weekend baking countless cookies to create a great new recipe and we have designed a better blended Unicorn Poop Cookie.
Below are the steps we took to create this work of unicorn awesomeness!
In a large bowl, cream together the cubed and softened butter, the cream cheese and sugar. We have found creaming these ingredients with a spoon is just as easy as using an electric mixer and there is less to clean up. Once the mixture is combined, stir in the eggs and the lemon extract.
In a second bowl, sift in the flour, salt and baking powder. Next, slowly spoon the sifted dry ingredients into the creamy mixture and continue to mix until fully blended.
Divide the dough into 4 equal parts. Tint each section of dough with different neon liquid food coloring colors. Work the color into the dough until the desired color is achieved.
Place the doughs into sealed containers, one container for each color or plastic zipper bags and chill for
1-1/2 to 2 hours.
Once the doughs have chilled, begin preheating the oven to 350°F or 180°C and remove the colored doughs from the containers. Take a small section of one of the colors of dough and roll it between your hands making a snake/ log shape.
Then, take your log shaped colors and place them side by side. They should look like the photo below:
The next step is to hold the ends of each strip together and begin twisting the dough clockwise. Until it looks like this:
When the dough is fully twisted, cut the dough into 4 inch sections. Take the 4 inch section and begin to roll it into a log/ snake shape. Like this:
Next, start to roll the dough into a spiral pattern.
Finally, sprinkle the spiraled dough with Disco Dust. For this project we used the Disco Dust in Rainbow Sparkle by Confectionery Arts International.
I have found the easiest way to apply the Disco Dust is to lightly sprinkle some of the dust onto a piece of wax paper. Then using a clean blush brush, swirl the brush into the dust and lightly tap to remove excess. Next, dab the brush on the top of the ready for the oven cookie dough and SHAZAM you have just Disco Dusted your very own Unicorn Poop Cookies.
Bake the cookies for about 15 minutes. You want the cookies to just be starting to lightly brown. The longer the cookies bake, the more they darken and the cookie colors begin to lose their brightness. Here is a finished cookie below:
